Apple & saffron halwa

Make your special occasion lovelier with a healthier twist on one of the most popular Indian desserts, halwa.
In this wholesome take on a traditional sweet, the sweetness comes from the apples, but you’re welcome to add some raisins or nuts for a bigger bite!
Makes 4-6 servings.
Ingredients
2 apples, pureed (with the peel on)
¾ cup semolina (suji)
1 cup milk
1.5 cups water
½ cup sugar
3 cardamoms, crushed
½ tsp of saffron
Method
Dry-roast the semolina for 2 minutes, taking care that it doesn’t turn brown.
Heat the milk and water together in a deep pan. When it comes to a boil, add the sugar, cardamoms, and saffron, and mix.
Slowly, add the semolina, while stirring, till the mix becomes semi-dry. Add the pureed apples. Stir well and cook for just under two minutes, as it thickens quite fast.
It’s ready! Scoop into bowls and serve warm, decorated with saffron threads or sliced apples.
