Pineapple upside-down cake (with and without rum)

Ingredients

For the topping

- 50gm unsalted butter, softened to room temperature
- 50gm brown sugar (I used a mix of coconut and raw sugar)
- 7 pineapple rings in syrup, drained – and save the syrup for later
- 25gm maraschino cherries (I ran out so I used dried cranberries)

For the cake

- 100gm unsalted butter, softened to room temperature
- 100gm plain flour
- 50gm brown sugar (I used raw sugar)
- 3 tbsp of the reserved pineapple syrup
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 egg
- 30ml dark rum (I used Old Monk)

Cooking notes

  • A golden, glistening top bejeweled with juicy pineapples and sweet cherries make this retro cake loved by everyone! The fun lies in waiting for the last part where you turn the cake upside-down to reveal the dazzling design at the bottom.

  • For a non-alcoholic cake, simply skip out the addition of the rum, and you’re all set.

  • Preparation time: Less than 60 mins

  • Makes 8-10 servings.

Prepare your ingredients

Remember to leave the butter out till it reaches room temperature!


Step 1: Preheat the oven to 180°C. Grease & flour a cake tin, or line it with parchment paper.


Step 2

Let’s prepare the topping first. Beat the softened butter and sugar together (50gm each) until they reach a creamy consistency (about 2-3 mins).

Step 3

Spread this mix on the base of your cake tin.

Step 4

On this topping, place the pineapple rings (remember to reserve the syrup for later), and then put the cherries (or cranberries) in the centres of the pineapple rings.


Step 5: Time to make the cake batter.

In a large bowl, add all the cake ingredients – softened butter, plain flour, sugar, pineapple syrup, baking powder, vanilla extract, egg, and rum.

Beat to a soft consistency using an electric whisk or wooden spatula.


Step 6

Spoon the batter gently on top of the pineapples decorated in the cake tin. Smoothen it out. Bake in the pre-heated oven for 35 minutes. After baking, let it rest on a wire rack for 15 minutes.

Step 7

Turn the cake out onto a plate. Serve warm with ice cream and enjoy!
