Air fryer sweet soy sauce chicken recipe

Ingredients

For the marinade For the air fryer
280 gm chicken breasts, cut into fillets (about 2 breasts) 1 tbsp sweet fruit chutney
4 tbsp soy sauce
1 tbsp vinegar
2 tbsp sweet fruit chutney (I used a peach-mango chutney)
1 tbsp minced garlic
1 tbsp ginger, finely chopped

Cooking Notes

Bite into juicy chicken cooked in a sweet and savory soy sauce glaze, all effortlessly prepared in the air fryer. Enjoy this for lunch with a salad, rice, or wrap it in crispy lettuce leaves.

Preparation time: 20 mins (and additional 60 mins for marination)

Makes 2–3 servings.

Method

  1. Combine the ingredients for the marinade in a bowl and mix well.
  2. Add the chicken fillets to the marinade and coat nicely. Refrigerate the marinating chicken for about one hour.
  3. Place the marinated chicken in the air fryer basket. For a no-mess cook, line your air fryer with aluminium foil or parchment paper.
  4. Cook at 180°C for 10 minutes. Then flip the chicken, top with the additional 1 tbsp of fruit chutney, and cook for another 10 mins or till the internal temperature is 70°C.
  5. Serve hot with rice and some greens.
